Spinach is sauteed with shallots and sprinkled with toasted pine nuts. This side dish is easy and ready in no time.

2 teaspoons canola oil
1 tablespoon minced shallots
1 (9-ounce) bag fresh baby spinach
1 tablespoon toasted pine nuts
1/8 teaspoon salt
Heat canola oil in a large skillet over medium-high heat. Add shallots; sauté 2 minutes. Add spinach; sauté 2 minutes or until spinach wilts. Stir in pine nuts and salt.
