Sautéed Mushrooms

This is a delicious, simple way to cook mushrooms for many different purposes--from topping pizzas to filling omelets.


Makes about 1 1/2 cups

3/4 pound mixed fresh mushrooms
2 tablespoons olive oil
2 small finely chopped garlic cloves
1/4 teaspoon sea salt
1 tablespoon chopped flat-leaf parsley


Total: 20 Minutes

1. Trim any tough stems from mushrooms and wipe caps with a paper towel if dirty. Cut bite-size.

2. Heat olive oil in a frying pan over medium-high heat. Add garlic; sizzle a few seconds. Add mushrooms and salt and cook until starting to brown, 5 minutes (add a splash of water if browning too fast).

3. Cook over low heat, covered, 5 minutes. Sprinkle with parsley.
