Sautéed Apple over Ice Cream

Use a bit of your favorite brandy in this dessert, then enjoy sipping the rest alongside it.
2 servings (serving size: about 1/2 cup apple and 1/2 cup ice cream)

1 tablespoon butter
1 1/2 cups sliced peeled Fuji apple
1 tablespoon sugar
3 tablespoons brandy
1/4 teaspoon fresh lemon juice
1/8 teaspoon ground ginger
1 cup vanilla reduced-fat ice cream


Melt butter in a small nonstick skillet over medium heat. Add apple; cook 5 minutes or until lightly browned, stirring frequently.

Add sugar, brandy, juice, and ginger; cook over medium-low heat 2 minutes or until apple is tender, stirring occasionally. Serve warm over ice cream.
