1 tablespoon all-purpose flour
1 tablespoon vegetable oil
1 (1-pound) package fresh Country sausage links, diced
1 small onion, chopped
1 small green pepper, chopped
1 (14 1/2-ounce) can whole tomatoes, undrained and diced
1/4 cup water
Salt and pepper to taste
Hot cooked rice


Combine flour and oil in a large skillet. Cook over medium heat, stirring constantly, until browned. Add sausage, onion, and green pepper; cook until vegetables are tender. Stir in tomatoes and water. Cover and simmer 1 hour, stirring occasionally. Add salt and pepper to taste. Serve over hot cooked rice.
