A food processor gives a fine texture to this flavorful blend. It's delicious on quesadillas.
Makes 6 cups

9 large Roma tomatoes (about 4 pounds), seeded and coarsely chopped
1/2 small onion, cut into pieces
2 garlic cloves, chopped
1 to 2 serrano peppers, seeded and chopped
1 cup fresh cilantro leaves and stems
1 teaspoon salt
1 teaspoon lime zest
2 tablespoons fresh lime juice


Prep: 15 Minutes
Combine all ingredients, in batches, in a food processor; pulse until evenly chopped. Cover and chill.
