Romaine Salad with Honey-Chile Dressing Recipe

Serves 4 (serving size: about 1 1/3 cups)

2 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon honey
1 1/2 tablespoons finely chopped seeded serrano chile
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
6 cups chopped romaine lettuce
1 cup very thinly sliced radishes
2 tablespoons crumbled queso fresco


Combine lime juice, olive oil, honey, serrano chile, salt, and pepper in a large bowl, stirring with a whisk. Add lettuce and radishes; toss to coat. Sprinkle with queso fresco.
