3 medium onions, cut into wedges
6 small red potatoes, halved
2 medium-size sweet potatoes, peeled and cut into 1/4-inch-thick slices
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
Toss together all ingredients; place on an aluminum foil-lined baking sheet.
Bake at 450° for 30 to 40 minutes or until onion and potatoes are tender.
