1 1/2 tablespoons olive oil
1/2 teaspoon Madras curry powder
1/4 teaspoon kosher salt

Preparation

1. Preheat oven to 475°.

2. Combine all ingredients on a jelly-roll pan; toss well to coat. Bake at 475° for 18 minutes or until browned and crisp-tender, stirring occasionally.
