Roasted Beets with Dill Recipe

Earthy sweet beets are a perfect partner to rich and toasty hummus--not to mention, they make for a stunning presentation. After a single bite, you'll be sold on this flavorful, 5-ingredient hummus topper. Season with salt and pepper to taste and serve with baked pita chips, if desired.

Serves 6 (serving size: about 3 tablespoons hummus and 3 beet wedges)

1 medium beet, trimmed
2 tablespoons minced fresh dill
2 teaspoons fresh lemon juice
1 teaspoon olive oil
1/8 teaspoon salt


Preheat oven to 400°. Wrap beet in foil; bake at 400° for 50 minutes or until tender. Peel and cut into wedges. Combine beet, dill, lemon juice, olive oil, and salt in a bowl. Top Israeli-Style Hummus with beet mixture.
