Red Pepper Mayonnaise

2 garlic cloves
1/3 cup drained and diced roasted sweet red peppers
1/2 teaspoon fresh lemon juice
1/8 teaspoon ground red pepper
1 cup mayonnaise, divided


With food processor running, drop garlic through food chute. Add diced pepper, lemon juice, ground pepper, and 1/4 cup mayonnaise. Process 1 minute or until very smooth, stopping to scrape down sides. Transfer to a bowl; stir in remaining 3/4 cup mayonnaise. Cover and chill at least 8 hours.
