Red Gravy Sauce

1 cup chopped green pepper
1 cup chopped onion
1/2 cup chopped green onion
3 cloves garlic, minced
1/3 cup vegetable oil
1 (10 3/4-ounce) can tomato puree
1 cup sliced fresh mushrooms
1 bay leaf
1 cup sherry
1 teaspoon salt
1/8 teaspoon pepper


Sauté green pepper, onion, and garlic in oil in a medium saucepan until tender. Add tomato puree, mushrooms, and bay leaf; simmer 25 minutes. Stir in sherry, salt, and pepper; continue cooking 5 minutes. Remove bay leaf.
