4 cups thinly sliced red cabbage
4 tablespoons cider vinegar
1 tablespoon sugar
1/4 teaspoon kosher salt
3/4 teaspoon caraway seeds

Preparation

Thinly slice 1 red cabbage to yield 4 cups. Toss the raw cabbage with 2 tablespoons cider vinegar. Steam 15 minutes. Toss steamed cabbage with 2 (yes, additional) tablespoons cider vinegar, 1 tablespoon sugar, 1/4 teaspoon kosher salt, and 3/4 teaspoon toasted caraway seeds.
