Poppy Seed-Lemon Muffins

1 (18.5-ounce) package yellow cake mix with pudding
2/3 cup vegetable oil
2/3 cup apricot nectar
4 large eggs
1/3 cup poppy seeds
1/2 teaspoon grated lemon rind
2 1/2 tablespoons fresh lemon juice


Combine all ingredients, stirring until blended. Spoon into greased muffin pans, filling two-thirds full.

Bake at 400° for 18 to 20 minutes or until golden brown. Remove from pans immediately, and cool on wire racks.
