Poached Pears

4 ripe pears
2 tablespoons lemon juice
1 large lemon, thinly sliced
2 cups water
2 cups sugar
2 (4-inch) sticks cinnamon
16 whole allspice


Peel pears, removing core from bottom end but leaving stem intact. Slice 1/4 inch from bottom of each pear to make a flat base. Brush pears with lemon juice to prevent browning; set pears aside.

Combine remaining ingredients in a large saucepan; bring to a boil. Add pears and cook, uncovered, over medium heat 20 minutes or until tender.

Remove pears to a warm serving dish using a slotted spoon. Continue cooking liquid over medium heat 15 minutes or until slightly thickened. Remove whole spices from syrup mixture, and discard. Pour syrup mixture over pears.
