Bar manager Eddie Johnson mixes this drink at Andina in Portland.

Makes 1 cocktail

2 ounces Quebranta pisco
1 ounce lime juice
1 ounce simple syrup
1 ounce pasteurized egg whites
2 drops Chuncho bitters or Angostura bitters
Key lime or regular lime, halved


1. In a cocktail shaker, combine pisco, lime juice, simple syrup, and egg whites. Add 3 or 4 ice cubes, then shake vigorously for about a minute.

2. Strain into a chilled rocks glass (or martini glass), then add bitters.

3. Squeeze in half a lime, then drop it into the glass.
