Pesto Bread Rounds

These make an excellent appetizer, meal accompaniment, or potluck contribution. The bread rounds are very versatile and go well with virtually any meal, whether it's soup, salad, or chicken. The reader likes to garnish the rounds in fun ways--with black olives, roasted red pepper slices, or small sprigs of cilantro.

Ingredients

1 (8-ounce) loaf French bread, cut into 20 (3/4-inch) slices
1/2 cup fat-free mayonnaise
1/4 cup (1 ounce) grated fresh Parmesan cheese
2 tablespoons grated Asiago cheese
1 tablespoon commercial pesto
1/2 teaspoon minced garlic
1/8 teaspoon black pepper

Preparation

Preheat broiler.

Place bread on a baking sheet; broil 1 minute or until toasted.

Combine mayonnaise and remaining ingredients in a medium bowl. Spread 1 1/2 teaspoons mayonnaise mixture on untoasted side of each bread slice. Place slices on baking sheet; broil 4 minutes or until the cheese and edges of bread are browned.
