Pastry Cream

Cooking Light
1 cup

1 cup 1% low-fat milk
3 tablespoons sugar
4 teaspoons cornstarch
1 large egg
1/2 teaspoon vanilla extract


Combine all ingredients except vanilla in top of a double boiler; cook over simmering water 8 minutes or until thick, stirring constantly with a whisk. Remove from heat; stir in vanilla. Pour into a bowl; cover surface of cream with plastic wrap. Chill.
