Vegetable oil
2 teaspoons matzo meal, divided
2 egg whites
1/2 cup sugar
1 cup blanched almonds, finely ground


Grease cookie sheet with oil; sprinkle with 1 teaspoon matzo meal. Set aside.

Beat egg whites (at room temperature) in a medium mixing bowl until foamy. Gradually add sugar, beating until stiff peaks form. Fold in almonds and remaining matzo meal.

Drop mixture by teaspoonfuls 1 inch apart onto prepared cookie sheet. Bake at 300° for 20 minutes or until lightly browned. Remove from cookie sheet, and cool on a wire rack.
