Oyster Sauce

1 tablespoon butter or margarine
1 tablespoon milk
3 tablespoons all-purpose flour
1 cup turkey or chicken broth
1 cup milk
1 (12-ounce) container fresh select oysters, drained and chopped
1 tablespoon minced fresh parsley
1/2 teaspoon salt


Combine butter and 1 tablespoon milk in a heavy saucepan; cook over low heat, stirring constantly, until butter is melted. Add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add broth, 1 cup milk, and oysters; cook over medium heat, stirring constantly, until slightly thickened and bubbly. Stir in parsley and salt.
