Oven-Barbecued Chicken

1 (3- to 3 1/2-pound) broiler-fryer, cut up
2 tablespoons shortening
2 tablespoons brown sugar
1 tablespoon salt
1/8 teaspoon red pepper
1 medium onion, chopped
1/2 cup chopped celery
1 cup water
1 cup catsup
1/4 cup lemon juice
3 tablespoons Worcestershire sauce
1 1/2 teaspoons prepared mustard

Preparation

Brown chicken in shortening in an ovenproof Dutch oven over medium heat. Combine next 10 ingredients, mixing well; pour sauce over chicken. Cover and simmer 30 minutes. Uncover; transfer to oven, and bake at 350° for 35 minutes.
