4 eggs, separated
2 cups sugar
2 tablespoons vinegar
1 teaspoon ground ginger
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 cup raisins
1 unbaked (9-inch) pastry shell


Beat egg yolks with a wire whisk in a large mixing bowl; add sugar, vinegar, spices, and raisins; mix well.

Beat egg whites (at room temperature) until stiff peaks form. Fold into raisin mixture. Pour filling into pastry shell. Bake at 375° for 45 to 50 minutes. Cool.
