Orange Sauce

1/2 cup sugar
1 tablespoon plus 2
teaspoons cornstarch
1/4 teaspoon salt
1 cup water
1 tablespoon butter or margarine
1 teaspoon grated orange rind
1/4 cup fresh orange juice
1/4 teaspoon orange extract


Combine sugar, cornstarch, salt, and water in a medium saucepan, stirring until dry ingredients dissolve. Cook over low heat, stirring constantly, until mixture is clear. Add butter, orange rind, juice, and flavoring. Continue to cook, stirring constantly, 5 minutes or until sauce thickens. Serve warm over pudding.
