The addition of orange rind and herbs elevates this pantry staple into a vibrant weeknight side.

Serves 4 (serving size: about 3/4 cup)

Ingredients

1/3 cup water
1 tablespoon chopped fresh oregano
2 teaspoons grated orange rind
1/2 teaspoon ground cumin
1/2 teaspoon kosher salt
2 (15-ounce) cans unsalted black beans, rinsed and drained
2 tablespoons chopped fresh basil

Preparation

1. Combine first 6 ingredients in a saucepan over medium heat. Cover and cook 10 minutes, stirring occasionally. Stir in basil.
