Orange Chicken and Rice

A little citrus takes this classic combination from familiar to fresh. Our kid testers promised to eat more chicken if it were prepared this way.

1 cup rice
1 cup fat-free, reduced-sodium chicken broth
1 cup orange juice
1/4 teaspoon ground nutmeg
4 cooked chicken-breast halves, in bite-size pieces
11-oz can mandarin orange segments, drained
1/4 cup chopped pecans or walnuts, optional


Prep time: 5 minutes
Cook time: 25 minutes

1. Combine rice, broth, juice, and nutmeg in a pot over medium heat. Bring to boil, cover, reduce heat to simmer, and cook for 15 minutes.

2. Add chicken to rice, cook another 5 to 7 minutes or until rice is tender. Remove from heat, stir in oranges.

3. Sprinkle individual servings with 1 tablespoon nuts for those who like them (be careful-kids under 4 may choke on nuts).

How kids can help: Measure ingredients; drain orange segments.
