Old Durham Church Crab Cakes

2 pounds fresh crab meat, drained and flaked
2 cups soft breadcrumbs
2 eggs, beaten
1/4 cup mayonnaise
2 tablespoons minced onion
2 teaspoons lemon juice
2 dashes hot sauce
2 teaspoons salt
1 teaspoon dry mustard
1/4 teaspoon paprika
1/4 teaspoon pepper
3 tablespoons vegetable oil


Combine all ingredients, except oil, mixing well; shape into 2 1/2-inch patties. Cover and chill at least 1 hour.

Heat oil in a large skillet; cook patties over medium heat 8 minutes on each side or until golden brown. Drain on paper towels; serve immediately.
