2 pounds okra, cleaned
1 medium onion, chopped
1/4 cup chopped green pepper
2 tablespoons vegetable oil
1 (14 1/2-ounce) can whole tomatoes, undrained
1 tablespoon vinegar
1 teaspoon salt
1/8 teaspoon pepper


Cut okra crosswise into 1/2-inch slices, and set aside.

Sauté onion and green pepper in oil in a heavy skillet over medium heat until tender. Add tomatoes, vinegar, salt, and pepper; stir well. Cover and cook over low heat 5 minutes. Add sliced okra; cover and simmer 1 hour.
