Oklahoma-Style Fried Cucumbers

2 medium cucumbers, peeled and cut into 1/4-inch slices
2 eggs, beaten
1 1/2 cups fine, dry breadcrumbs
Vegetable oil


Dip cucumber slices in egg; dredge in breadcrumbs. Fry cucumber slices in hot oil (375°) in a skillet until browned, turning once. Drain well on paper towels.

Serving Suggestions: Oklahoma- Style Fried Cucumbers may be served with any of the following: Dill Sauce, Horseradish Sauce, Mustard Dip Sauce, or any sour cream sauce.
