Oklahoma Crackling Cornbread

1 3/4 cups cornmeal
1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 eggs, beaten
2 cups buttermilk
1 cup cracklings


Combine cornmeal, flour, baking powder, and soda; mix well. Add eggs, buttermilk, and cracklings, stirring well.

Heat a well-greased 9-inch cast-iron skillet in a 400° oven for 3 minutes. Pour batter into hot skillet. Bake at 400° for 35 minutes or until golden brown.
