Udon is a thick Japanese noodle made of wheat flour. Serve with onion, garlic, and shredded carrot for a quick and easy side to chicken teriyaki or another Japanese-inspired entrée.

Serves 4 (serving size: 2/3 cup)

4 ounces udon noodles
1 1/2 tablespoons canola oil
1 small onion, thinly sliced
1 garlic clove, minced
1/2 cup shredded carrot
1 tablespoon rice wine vinegar
1 tablespoon lower-sodium soy sauce


Cook udon noodles according to directions, omitting salt and fat. Heat a skillet over medium-high heat. Add canola oil. Add onion; sauté 3 minutes. Add garlic; sauté 30 seconds. Remove from heat; stir in carrot, vinegar, and soy sauce. Add noodles; toss to coat.
