New Potatoes With Parsley Butter

1 3/4 pounds new potatoes, washed and scrubbed
1/4 cup butter or margarine, melted
1/3 cup chopped fresh parsley
Salt and pepper to taste


Pare a 1-inch strip around center of each potato, if desired. Cover potatoes with water; cook, covered, over medium heat 25 minutes or until tender. Drain, and set aside.

Combine remaining ingredients, stirring well. Pour over potatoes, coating thoroughly.
