For fresh and summery flavor, serve Nectarine and Basil Couscous on the side with your favorite main dish.
Serves 4 (serving size: about 1/2 cup)

Ingredients

1 1/4 cups water
3/4 cup Israeli couscous
1/3 cup chopped Vidalia or other sweet onion
3 tablespoons chopped fresh basil
2 tablespoons fresh orange juice
1/4 teaspoon salt
1 medium nectarine, diced

Preparation

1. Bring water to a boil. Add couscous. Reduce heat to medium-low; cover and simmer 8 minutes or until liquid is absorbed. Stir in onion, basil, orange juice, salt, and nectarine.
