1 cup sugar
1 tablespoon all-purpose flour
4 eggs, beaten
1 cup light corn syrup
1 tablespoon grated lemon rind
3 tablespoons lemon juice
1 tablespoon plus 1 teaspoon butter or margarine, melted
1 unbaked (9-inch) pastry shell
Whipped cream (optional)
Grated lemon rind (optional)


Combine sugar and flour in a medium mixing bowl; add eggs, syrup, 1 tablespoon lemon rind, juice, and butter, mixing well.

Pour filling into pastry shell. Bake at 375° for 10 minutes. Reduce temperature to 350°; bake 45 minutes. Cool to room temperature. Garnish with whipped cream and sprinkle with lemon rind before serving, if desired.
