Mushroom Paprika

3 medium onions, chopped
3 tablespoons butter or margarine
1 1/2 pounds fresh mushrooms, cleaned and sliced
1 1/2 cups chicken broth
2 teaspoons paprika
1/4 teaspoon salt
1/2 teaspoon pepper
Mashed potatoes (optional)
Hot cooked rice (optional)


Sauté onion in butter in a large skillet until tender; add remaining ingredients, stirring well. Cook over medium heat, stirring occasionally, 15 minutes or until mushrooms are tender. Serve over mashed potatoes or hot cooked rice, if desired.
