5 ounces rice noodles
1 teaspoon minced garlic
1 teaspoon minced ginger
2 teaspoons dark sesame oil
1 1/2 cups sliced shiitake mushrooms
1/2 cup sliced onion
1 tablespoon lower-sodium soy sauce
1/4 teaspoon kosher salt
1/2 cup sliced green onions


Prepare rice noodles; drain. Sauté garlic and ginger in sesame oil over medium-high heat for 30 seconds. Add mushrooms and onion; sauté 4 minutes. Stir in rice noodles, soy sauce, and salt. Sprinkle with green onions.
