Mock Crackling Bread

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon plus 1 teaspoon baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 1/2 cups milk
1/4 cup shortening, melted
1 egg, beaten
10 slices bacon, cooked and crumbled


Combine cornmeal, flour, baking powder, sugar, and salt; add milk, shortening, and egg, mixing well. Stir in bacon.

Pour batter into a well-greased 8-inch square pan. Bake at 425° for 25 minutes or until lightly browned. Cut into squares, and serve with Creole Celery Sauce.
