1 (8-ounce) package fresh Sugar Snap peas, trimmed
2 green onions, chopped
1 large garlic clove, minced
2 tablespoons minced fresh mint
1/8 teaspoon salt
1/4 teaspoon black pepper


1. Coat a large nonstick skillet with cooking spray, and place over medium heat until hot. Add peas, green onions, and garlic; cook 3 minutes or until peas are crisp-tender, stirring often. Remove from heat; stir in mint, salt, and pepper.
