Minted Strawberries and Bananas in Cantaloupe Cups

You can skip making the cantaloupe cups and simply serve the fruit mixture in dessert bowls. You could also make cantaloupe balls and toss all the ingredients together.

2 cantaloupes (about 2 1/2 pounds)
3 cups sliced strawberries
1/2 cup orange juice
1/4 cup sugar
1/4 cup chopped fresh mint
1 tablespoon lemon juice
2 teaspoons vanilla extract
1 1/2 cups sliced banana


Cut cantaloupes in half crosswise; discard seeds. Cover and chill.

Combine strawberries and next 5 ingredients (strawberries through vanilla) in a bowl. Cover and chill for 30 minutes. Stir in bananas; spoon 1 cup strawberry mixture into each cantaloupe half.
