2 cups diced peeled peaches
2 tablespoons fresh lime juice
1 1/2 teaspoons sugar
1/4 teaspoon kosher salt
1/4 teaspoon ground ginger
1/8 teaspoon ground red pepper
1/4 cup finely chopped red onion
1 1/2 tablespoons chopped fresh mint

Preparation

Combine peaches, lime juice, sugar, salt, ginger, and ground red pepper in a bowl. Let stand 10 minutes. Stir in onion and mint.
