1/2 cup butter, softened
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice


Cream butter in a small mixing bowl. Add salt, pepper, parsley, and lemon juice; stir well. Store mixture in a covered container in refrigerator until ready to use. Serve butter at room temperature with pompano or other baked or broiled fish.
