Mashed Potato Puffs

1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 medium potatoes, cooked, peeled, and mashed (about 1 cup)
1 egg, beaten
1 teaspoon chopped fresh parsley


Combine flour, baking powder, and salt. Add mashed potatoes, egg, and parsley, mixing well. Drop mixture by teaspoonfuls into deep hot oil (375°); fry until golden brown.
