Marinated Tomatoes


Add flavor to grape tomatoes by tossing them in a mixture of lemon juice, olive oil, sugar, salt, black pepper, minced shallot, and thyme.

3 tablespoons fresh lemon juice
3 tablespoons extra-virgin olive oil
3/4 teaspoon sugar
1/2 teaspoon kosher salt
Freshly ground black pepper
2 pints grape tomatoes, halved
1 large shallot, minced
2 teaspoons chopped fresh thyme


In a large bowl, whisk together lemon juice, olive oil, sugar, salt, and a generous grind of black pepper. Add tomatoes, minced shallot, and thyme; toss well. Transfer to a sealable container.
