Marinated Mushrooms

1 1/2 pounds fresh mushrooms
1/4 cup finely chopped celery
2 cloves garlic, minced
1/4 cup butter or margarine, melted
1/4 cup water
1 cup vinegar
1 cup olive oil
1/4 cup lemon juice
2 tablespoons chopped fresh parsley
2 bay leaves
1 teaspoon coarsely ground black pepper
1/4 teaspoon dried whole oregano


Clean mushrooms with damp paper towels. Combine mushrooms, celery, garlic, butter, and water in a large skillet; bring to a boil. Reduce heat; cover and simmer 5 minutes. Add remaining ingredients, stirring well. Cover and simmer 3 minutes. Let cool. Marinate in refrigerator several hours or overnight. Remove mushrooms from marinade before serving.
