Olive oil and a sprinkling of fresh herbs create an ultra-flavorful marinade for feta cheese. Serve on crackers or spread on crusty bread for an elegant appetizer.

Makes 6 servings

1 1/2 cups extra-virgin olive oil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh thyme
2 teaspoons chopped fresh rosemary
1/4 teaspoon black peppercorns
3 garlic cloves, coarsely chopped
2 Fresno peppers, thinly sliced
1 (8-ounce) block feta cheese


Hands-on: 20 Minutes
Total: 8 Hours, 20 Minutes

1. Combine first 7 ingredients in a medium microwave-safe bowl. Microwave on HIGH for 1 minute. Let stand 10 minutes.

2. Cut feta block into 16 (1/2-inch) cubes. Gently stir cheese into oil mixture. Cover and refrigerate 8 hours or overnight. Drain (reserve oil for a delicious homemade salad dressing) and serve.
