Makes 6 servings
1. Combine first 7 ingredients in a medium microwave-safe bowl. Microwave on HIGH for 1 minute. Let stand 10 minutes.
2. Cut feta block into 16 (1/2-inch) cubes. Gently stir cheese into oil mixture. Cover and refrigerate 8 hours or overnight. Drain (reserve oil for a delicious homemade salad dressing) and serve.
