Toss together a mango and tomato mixture and serve on lettuce leaves. 

Serves 2 (serving size: about 1 cup)

1 1/2 cups cubed peeled ripe mango
1/2 cup grape tomatoes, quartered
2 teaspoons canola oil
1 teaspoon fresh lime juice
1/4 teaspoon kosher salt
1/4 teaspoon crushed red pepper
1 small shallot, thinly sliced
2 large green leaf lettuce leaves


1. Place first 7 ingredients in a medium bowl; toss to combine. Divide mango mixture evenly between lettuce leaves.
