Serve this fruity slaw on the side, or pile it onto your burrito bowl for more texture. Buying pre-shredded coleslaw saves you time better spent cooking.

 

Serves 4 (serving size: about 1 1/4 cups)

Ingredients

1/4 cup thinly diagonally sliced green onions
1 tablespoon rice vinegar
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 (10-oz.) pkg. angel hair coleslaw
1 jalapeño, seeded and finely chopped
1 small ripe mango, peeled and thinly sliced

Preparation

1. Combine all ingredients in a large bowl; toss well to coat. Let stand 10 minutes before serving.
