Mandy's Banana Bread

Green developed this recipe when Amanda was a toddler (now Jacob helps out too). "For Amanda, the best part is sprinkling the chocolate chips on top--some for her, some for the loaf..." Reality-tested tip: "For moms who will ultimately eat most of this bread, substitute Egg Beaters for a lower-fat version!"

3 overripe bananas
1 1/2 cups flour
1 cup sugar
1/2 teaspoon baking soda
Dash of salt
1 egg
1/4 cup (1/2 stick) butter or margarine
4 tablespoons milk-chocolate chips or M&M's


Prep time: 10 minutes
Baking time: 70 minutes

1. Preheat oven to 325 degrees. Mash bananas in a large bowl. Add flour, sugar, baking soda, salt, and egg.

2. Melt butter in microwave, add it to the bowl, and stir until just blended.

3. Pour into greased loaf pan. Sprinkle on chocolate chips. Bake for 70 minutes, or until a toothpick inserted in middle comes out clean.
