Lemony Strawberry-Spinach Salad

Super Quick. A light, lemony vinaigrette adds a refreshing twist to this traditional strawberry-spinach salad.

1 (10-ounce) package trimmed fresh spinach, torn
2 cups sliced fresh strawberries
1/2 cup thinly sliced red onion
1/3 cup fresh lemon juice
3 tablespoons sugar
1 tablespoon vegetable oil
2 teaspoons grated lemon rind
Freshly ground black pepper


1. Combine first 3 ingredients in a large bowl.

2. Combine lemon juice, sugar, and oil in a small bowl; stir with a whisk until blended. Stir in lemon rind. Pour over spinach mixture; toss. Sprinkle with pepper.
