Lemon zest lends extra brightness to our Lemony Caesar Dressing.
Makes 1/2 cup

1/4 cup extra virgin olive oil
1/2 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 to 2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 small garlic clove, finely minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 teaspoon anchovy paste (optional)
1/2 cup freshly grated Parmesan cheese
Process first 8 ingredients and anchovy paste, if desired, in a blender, stopping to scrape down sides. Add cheese; process until smooth.
