Try this healthy, whole-wheat orzo dish. Parsley and grated lemon and orange rind give it a fresh, zesty flavor.
Serves 4 (serving size: about 1/2 cup)
Melt butter in a medium saucepan over medium heat. Add orzo; toss to coat. Add chicken stock to pan; bring to a simmer. Cover, reduce heat, and simmer 17 minutes or until liquid is absorbed. Stir in parsley, lemon rind, orange rind, and salt.
