Lemon Curd

6 eggs
2 egg yolks
2 cups sugar
1/4 cup grated lemon rind
3/4 cup lemon juice
1 cup butter or margarine


Combine eggs, yolks, and sugar in top of a double boiler, stirring well. Add remaining ingredients; place over gently boiling water. Cook, stirring constantly, until smooth and thickened. Remove from heat; let cool. Chill.
